But it also means summer is drawing to a close. I went to QT the other day to try to get in my last cheap drink of the summer, but it was already over :`( I shed a little tear as I used up all the dimes in my hand. The freedom that summer brings is gone and school has started up once again. It was a good summer.
In August I had some great participants in my Cookie Dough theme. First up, I'll start off with what I made: Chocolate Chip Cookie Dough Brownies. You can find the recipe over at Brown Eyed Baker's blog.
The recipe was easy and straightforward. I made them for a snack at work and it seemed that most everyone enjoyed them.
You mix up the brownies (from scratch) and bake them. Let them cool and then mix up the ingredients for the cookie dough and layer that on top, unbaked. It was a great recipe and I believe I will save it to use again.
Next up, Tara picked out her favorites: Cookie Dough Balls. The recipe is from Joy the Baker. When I got out the recipe to make them, I looked at the date we had last/first made them and it was almost a year ago!!! We could hardly believe it.
This time I used peanut butter as the binder instead of applesauce. They set up much better in the freezer and, of course, I didn't mind the addition of peanut butter to a chocolate chip cookie dough!
These were simple, delicious, and will remain in my recipe book to be made again and again!
Natalie picked out Chocolate Chip Cookie Dough Cupcakes from Kevin and Amanda's blog. I had seen several versions of cookie dough cupcakes, but had never gotten around to making them. I was sure glad she chose these!
You simply freeze cookie dough in small balls. Then we just mixed up a vanilla cake mix and distributed the batter into the cupcake liners. Then you drop a small ball of frozen dough into each cup.
The reason you freeze the dough beforehand is so even though it goes in the oven with the cake batter, it does not cook all the way through and still tastes like dough. Then we whipped up a cookie dough frosting and iced the tops.
I liked the frosting and ate it for several days after (there was plenty leftover!) with graham crackers. My only concern was that it didn't set up well. I think maybe I let the butter get too warm or something because I added a considerable extra amount of powdered sugar and even then it was fairly thin. But when left in the fridge, it stayed on the cupcakes just fine and tasted great!
Stephanie picked out a recipe that was simple and straightforward. I had seen Pioneer Woman do this on her blog and thought it would be a great addition to the cookie dough month. She bought chocolate chip cookie dough and Reese's PB cups.
Then you simply roll the cookie dough into balls and place them in a mini muffin pan. Let these bake for a bit. While they're baking, make sure you're unwrapping the Reese's!
As soon as the cookies come out of the oven, you place the Reese's into the middle of each cookie-muffin. They are wonderful and simple and I can only imagine the multitude of variations you could make. Sugar Cookie Dough + Twix, PB Cookie Dough + Reese's PB Cups, Chocolate Chip Cookie Dough + Snickers... you get the idea!
