I started out by making my go-to pie crust, Pioneer Woman's. This time, instead of mixing it by hand, i mixed it together in the Kitchenaid. I didn't feel like taking extra time doing it by hand. I feel that it still turned out ok, but I think it was a little less flaky because of the lack of hand mixing.
When I was searching for a recipe for peach pie, I was surprised by the lack thereof on the blogs that I frequent. The few that did have peach pies featured some type of custard pie and Lovebug can't have that. I needed something traditional that required no dairy. I ended up finding one to try from the blog Bake at 350. Not only did it look good, I thought it had a fitting name: Texas-Style Peach Pie.
The pie came together relatively easy. After making the crust, I peeled and sliced the peaches. The peaches were combined with flour, sugar, lemon juice, and a few other ingredients. I dumped this delicious combo (yes, it was good just like this -- I thought about eating the middle and making more!) and then took my first stab at creating a lattice top. It was pretty easy, in my opinion, although I'm not sure that it was as perfect as other lattice pies I have seen, it still had the look of a braid/weave and I was pretty happy with the result.
After it baked, we let it set up for a bit before cutting and serving. We served the pie warm with vanilla frozen yogurt and I feel it was a giant success!

Beautiful Pie and Delicious Looking. I want to make one now. I'm interested in the other ingredients you mentioned. I usually make a mixture of cornstarch, sugar, cinnamon, lemon juice and pour over peaches and cook a wee bit. And cover w/pats of butter before putting on the crust. You are getting REAL good, Daughter. I'm proud of you!!! Love, Mom
Aww thanks Mom! I really appreciate that coming from you! Let's see the ingredients were: lemon juice, flour, sugar, salt, and nutmeg - no cooking, then I put a few pats of butter as well. I nearly forgot! But since I used a lattice top I was able to squeeze them in :o)
