Happy Pi Day

Pi(e) Day was Wednesday -- 3.14! My sister was here so we made a Blueberry Cream Pie to celebrate. Really she did all the work, but I have made it once before :o) It turned out great!



I found this recipe from the blog, A Cozy Kitchen.

1 baked pie shell
1/2 c. whipping cream
3 T. sugar, divided
8 oz. cream cheese, softened
1 t. vanilla extract
2 c. fresh blueberries

In a bowl, beat the whipping cream and 1 T. of sugar until stiff peaks form.

In a larger bowl beat together the rest of the sugar, cream cheese, and vanilla extract. Once everything is well combined and the cream cheese is smooth and creamy, slowly fold in the whipping cream. Once everything is combined gently fold in the blueberries.

Pour the filling into a prepared pie shell and chill for at least an hour to allow the pie to set up.
