Pasta with Asparagus

When you see fresh asparagus on sale at the grocery store for $1.99 per pound, you don't just consider buying it. You commit to getting it! The window for asparagus is short, so I seized the moment. This morning I remembered a recipe my Mom made when I was growing up, so I cracked open my cookbook with recipes given me from various family members and texted Jeremiah the grocery list, which didn't actually end up being much. If you're ready for a taste of spring, I recommend making this dish soon! The boys ate it better than I expected, so that's a nice bonus :) 
Pasta with Asparagus  
2 lbs. fresh asparagus, cut into 1 inch pieces, diagonally
16 oz. very thin spaghetti noodles (I used angel hair)
8 slices bacon, cut into 1 inch pieces
1/2 c. diced green onion (I just used red because that's what I had on hand)
1/2 c. light cream (I used coconut milk to make it easier on Jeremiah's stomach)
1/2 - 3/4 c. parmesan cheese
1/2 t. black pepper 
1/4 c. butter, softened

Cook asparagus in boiling, salted water for 3 minutes. Drain and set aside. Cook spaghetti according to package directions. Drain and return to kettle to keep warm. Meanwhile, in a skillet, cook bacon until crisp. Remove to a paper towel. In bacon drippings, saute onion until soft. Add asparagus and pepper; heat through. Quickly toss together spaghetti, asparagus mixture, bacon, butter, cream and cheese. Serve immediately. Yield: 6-8 servings.

Yummmm, i need to make this soon. Asparagus here is still 3.99; but it will go on sale soon i'm sure. Thx for the reminder. Love, Mom
