I was in need of something sweet (surprise, surprise) after supper one night. I happened to see this recipe on the side of our HappyO's box. I had all the ingredients, I didn't feel like taking the time to bake cookies, and I'm always up for chocolate & peanut butter combos, so these fit my parameters.
Chocolate Peanut Butter Clusters
**from the Best Choice HappyO's box
1/2 c. light corn syrup
1/2 c. semi-sweet chocolate chips
1/4 c. sugar
1/2 c. smooth peanut butter
3 c. toasted oat cereal
Place corn syrup, chocolate chips, and sugar in medium-size saucepan over medium heat. Cook, stirring frequently until bubbles break the surface. Remove from heat. Add peanut butter. Mix until smooth. Stir in toasted oat cereal until evenly coated. Drop by teaspoons onto waxed paper, forming clusters. Cool. Makes about 3 1/2 dozen.
I was actually a little embarrassed because Jeremiah had asked for oatmeal cookies and I made these instead. I sampled a couple before he came home from work and thought they were mediocre. But I set them out for him anyway... and he liked them! I might not make them again, but they were a quick fix for my sweet tooth.
